The tradition of brewing in Germany dates back to 800 BC when Germanic tribes began fermenting grains. In 1553, Bavarian ruler Duke Albrecht V decreed that brewing would stop between April 23 and September 29 to prevent beer from spoiling in the summer. This left brewers with a busy March and relaxed summer months as their lagers aged in cool caves. By the time September arrived, they would finish their Marzen beers at Oktoberfest in preparation for a fresh batch of hops and malt.
